S30v vs s90v. Many people will always want the super steel or the latest steels. I find S30V to be a great balance and easy to sharpen and take care of. My favorite at the moment is K390. Everything is a balance of edge retention and toughness as well as stainless vs non- stainless. If the goal is just edge retention, S90V is hard to beat.

And I dare say no one else here honestly could either. The same goes for S90V, Magna Cut, or whatever. Maybe a metallurgist or someone with the time and equipment to do exhaustive testing could discern a difference but even then it's likely inconsequential for 99% of knife users. JMO.

I have an S110v & M4 Military and my first pick would be M4. Unfortunately the M4 models seem to be quite expensive. If I had to choose between S30v & S110v for general use where corrosion wasn't an issue, I would probably get a cheap used S30v Military. Because well, it's cheaper, and S30v is easier to work with.
